Citrus Tart with Fresh Berries

Ingredients:

For the crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 1/4 cup powdered sugar
  • 1/4 tsp salt
  • 1 large egg yolk
  • 2-3 tbsp cold water

For the filling:

  • 1 cup fresh grapefruit juice
  • 1/2 cup fresh tangelo juice (or substitute with orange juice)
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 large egg yolks
  • 1/2 cup unsalted butter, cut into small pieces
  • Zest of 1 grapefruit
  • Zest of 1 tangelo (or orange)

For the topping:

  • Fresh blueberries
  • Fresh cherries
  • Powdered sugar for dusting

Instructions:

  1. Prepare the Crust:
    1. In a food processor, pulse the flour, powdered sugar, and salt until combined.
    2. Add the chilled butter pieces and pulse until the mixture resembles coarse crumbs.
    3. Add the egg yolk and pulse again until combined.
    4. Gradually add cold water, one tablespoon at a time, and pulse until the dough starts to come together.
    5. Turn the dough onto a lightly floured surface and knead gently to form a ball. Flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Pre-bake the Crust:
    1. Preheat your oven to 375°F (190°C).
    2. Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan.
    3. Press the dough into the tart pan and trim any excess. Prick the bottom with a fork.
    4. Line the crust with parchment paper and fill with pie weights or dried beans.
    5. Bake for 15 minutes, then remove the parchment paper and weights. Bake for an additional 10 minutes or until golden brown. Let it cool completely.
  3. Prepare the Filling:
    1. In a medium saucepan, combine the grapefruit juice, tangelo juice, sugar, eggs, egg yolks, and zest.
    2. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 10-12 minutes).
    3. Remove from heat and stir in the butter pieces until fully melted and smooth.
    4. Pour the filling into the cooled crust and smooth the top.
  4. Chill and Decorate:
    1. Refrigerate the tart for at least 2 hours or until set.
    2. Before serving, top with fresh blueberries and cherries.
    3. Dust with powdered sugar for an extra touch of elegance.
