Citrus Tart with Fresh Berries
Ingredients:
For the crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cut into small pieces
- 1/4 cup powdered sugar
- 1/4 tsp salt
- 1 large egg yolk
- 2-3 tbsp cold water
For the filling:
- 1 cup fresh grapefruit juice
- 1/2 cup fresh tangelo juice (or substitute with orange juice)
- 3/4 cup granulated sugar
- 3 large eggs
- 2 large egg yolks
- 1/2 cup unsalted butter, cut into small pieces
- Zest of 1 grapefruit
- Zest of 1 tangelo (or orange)
For the topping:
- Fresh blueberries
- Fresh cherries
- Powdered sugar for dusting
Instructions:
- Prepare the Crust:
- In a food processor, pulse the flour, powdered sugar, and salt until combined.
- Add the chilled butter pieces and pulse until the mixture resembles coarse crumbs.
- Add the egg yolk and pulse again until combined.
- Gradually add cold water, one tablespoon at a time, and pulse until the dough starts to come together.
- Turn the dough onto a lightly floured surface and knead gently to form a ball. Flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Pre-bake the Crust:
- Preheat your oven to 375°F (190°C).
- Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan.
- Press the dough into the tart pan and trim any excess. Prick the bottom with a fork.
- Line the crust with parchment paper and fill with pie weights or dried beans.
- Bake for 15 minutes, then remove the parchment paper and weights. Bake for an additional 10 minutes or until golden brown. Let it cool completely.
- Prepare the Filling:
- In a medium saucepan, combine the grapefruit juice, tangelo juice, sugar, eggs, egg yolks, and zest.
- Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 10-12 minutes).
- Remove from heat and stir in the butter pieces until fully melted and smooth.
- Pour the filling into the cooled crust and smooth the top.
- Chill and Decorate:
- Refrigerate the tart for at least 2 hours or until set.
- Before serving, top with fresh blueberries and cherries.
- Dust with powdered sugar for an extra touch of elegance.
